End of the week! Thank goodness!

This week has been a hard week for me. It started out really good! Eric and I are continuing to grow :) it is amazing how i continue to fall in love him! I didn't know that love someone this much! So like i said its been a hard week, My job just isn't want i want it to be.  I was never cut out for food prep, i bake not cut. LOL! but lately things have just been going wrong there. Something is going on with our cash register and its nothing we are doing! Its one of those instances where you are shaking as you are doing your job because you feel like if you make one mistake you are going to get fired! not the way you want to go to work everyday. So i'm currently on the hunt again for another job. I am going to a couple different temp agencies today to see if i can't find something different.
It doesn't help that on Tuesday my dad was taken to the hospital for the Rhino Virus, (the common cold) but with the transplant that is why he is in the hospital. I called him at work on Wednesday and just wasn't handling it well. A good friend (emily) was really good at helping me put life into perspective. And when i came home from work, Eric was here waiting to make sure i was okay :) i am so grateful for a wonderful support team :)
Wednesday we went to the movies with Chris and Marie, that was SO much fun! Except for the fact that it was late at night! We saw G.I.JOE 2. It was really good. I didn't mind it at all! I stayed awake the whole time and it was great! I wasn't even tired at work on thursday!
Yesterday was the last day of the week for me! i am so glad that this work week was over! We went over to Chris and Marie's, Marie and I went out to target, and Chris and Eric went to an guys game night. It was a great night :) I am starting a project that makes me just so excited!
Now i'm going to get up and get going for the day! :)

Habits

Eric and I have started a new goal to try to help us improve our life. The first goal is to brush our teeth every night, we always brush them in the morning but at night we lay on the couch and i end up falling asleep then when he is ready for bed he wakes me up and we move to the bedroom. Well both of us have been having toothaches. Eric just had a root canal. I decided it would be better if we got in the habit of brushing our teeth at night it might help. So Vanessa Peterson gave us a great idea (im not sure if she knew that) but we went and visited her and she had tabs on her mirror. She was trying to start a habit, each tab had a number on it, and each day she did the habit she could pull a tab off. 
The other habits we've started was couple scripture reading and prayer. I've tried to do this many times but like i said i fall asleep all the time at random times, So again we have started our tabs for scripture reading and prayer. We have done AMAZINGLY (if i do say so myself which i do) I really think it is bring us closer together :) 

I am trying to also keep the apartment clean, I get tired of doing it all on saturday, my first week went well, it wasn't the best but it went well. This week has already started off better! I was able to come home from work and clean the kitchen and because i was in such a great mood i decided to make yummy bread :) Now eric is making dinner :)


Overall I am just happy with how wonderful my life is!

Learning how to cook :) Crock-pot recipes!

So i thought i would share some of my recipes i have been trying as of late. Some have been YUMMY some...not so much (don't worry i won't share those)

Citrus- Glazed Chicken
4 boneless, skinless chicken breasts
1/3 cup orange juice
1 (14 oz) can chicken broth
3 tbsp brown sugar
1/8 tsp salt
1 tbsp cornstarch

Place chicken in a greased 3-41/2 quart slow cooker. Pour the orange juice and chicken broth over the chicken. Sprinkle brown sugar and salt over top. Cover and cook on low heat for 6-9 hours. Remove chicken with a slotted spoon or spatula; set aside

Pour liquid from the slow cooker into a small saucepan. Stir in the cornstarch with a whisk. Bring to a boil over medium heat, stirring until sauce thickens. Pour glaze over chicken

Hawaiian BBQ chicken
4-6 boneless, skinless chicken breasts
1 (8oz) can crushed pineapple
1 (16oz) bottle barbecue sauce
hot cooked rice

Place chicken in a greased 31/2-5 quart slow cooker. Combine the pineapple and barbecue sauce and then pour over chicken. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours. Serve over the hot cooked rice 

Chicken Teriyaki 
10-12 boneless, skinless chicken tenders, cut into thirds
1 (16oz) bag frozen oriental vegetables
1 (18 oz) bottle teriyaki sauce

Place chicken in a greased 3-41/2 quart slow cooker. Combine the frozen vegetables and teriyaki sauce and then pour over the chicken. Cover and cook on low heat for 4-6 hours or on high heat for 3.

Sweet 'n' salty chicken (FAVORITE)
4-6 boneless, skinless chicken breasts 
1 cup soy sauce
1 cup sugar
1 tsp garlic salt
1/2 cup chopped onions

Place chicken in a greased 41/2-6 quart slow cooker

In a saucepan, combine the soy sauce, sugar, garlic salt, and onion. Bring to a boil and then pour over the chicken. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours.


All Day Salsa Chicken (FAVORITE)
3-4 boneless skinless, chicken breasts
1 (16 oz) jar chunky salsa
1 (10.5 oz) can cream of chicken coup, condensed

Place chicken in a greased 3-41/2 quart slow cooker. Combine the salsa and soup and then pour over the chicken. Cover and cook on low heat for 6-8 hours.

Eric and I will take the chicken out (after the 6-8 hours) and shred it. After shredding it we will put it back in the sauce (whether in a bowl or back in the crockpot) we will eat it with tortilla chips.


Easy Lasagna (Eric didn't really like this one but i did and it was fast)

12 lasagna noodles, uncooked
1 lb ground beef, browned and drained
1 tsp Italian seasoning
1 (28 oz ) jar spaghetti sauce
1/4 cup water
1 (16 oz) container cottage cheese
2 cups grated mozzarella cheese

Break noodles in half. place half of the noodles in the bottom of a greased 4-quart slow cooker. Stir the Italian seasoning into meat and then spread half of the meat over the noodles in the slow cooker. Spoon half of the sauce over the meat. Pour half of the water over top. Layer half of the cottage cheese and half of the mozzarella over the beef. Repeat layers. Cover and cook on low heat for 4-5 hours. Do not overcook of the noodles will become mushy.

Hot fudge brownie cake (I have only made this once but...it was good)
2 cups packaged brownie mix
1 lg egg
1 tbsp vegetable oil
1/4 cup water
1/3 cup milk chocolate chips
1/3 cup chopped nuts (i didn't use nuts)
1/2 cup brown sugar
2 tbsp baking cocoa
3/4 boiling water

Combine the brownie mix, egg, oil, water, chocolate chips, and nuts. Spread the batter in a greased 2 1/2 - 3 1/2- quart slow cooker. Combine the sugar, cocoa and boiling water, making sure the sugar is completely dissolved. Pour mixture over the batter. Cover and cook on high heat for 2 hours. Turn off the slow cooker and let the brownies sit, covered, for 30, minutes

**When baking breads or cakes, place 6-8 paper towels across the top of the slow cooker stoneware and then place the lid on top. this prevents the breads or cakes from becoming soggy.

Writing is like tasting life twice :)

I was shopping this week and there was a journal with the saying "writing is like tasting life twice" That has really been on my mind as of lately! i love it! i love knowing i can go back and read what Eric and I have been doing as we've been starting our life together! 

Well it has been a good week, not really eventful, We went bowling with Chris and Marie (and of course Ethan) We went at 9:30 pm because of leagues. The first game we played we all played with the bumpers. After that Eric and Chris switched lanes and Marie and I stayed with Ethan, This little 5 year old was AMAZING! he would take the ramp to where he wanted, placed the ball, and run back to push it :D It was adorable! As we watched the ball we were in shock, and STRIKE!!!! he was so crazy good! He got the high score of the night! 

Tuesday, i had a freak out! i had taken my rings off at work to put lotion on, i left work and got to the library and i realized MY RINGS WERE NOT ON!!! Yeah, talk about a freak out! So i drove back to work, and i couldn't find them! I called my co-worker and she remembered me putting them in my apron so i found them, Needless to say, lotion or not, my rings are not coming off! 

Wednesday was our 5 month anniversary, Eric was to go to the dentist and wasn't really feeling well, I had a headache and not feeling well either, I wrote the majority of our Thank you Cards, and then we ordered a pizza, I googled promotion codes for papa johns and i found one that gave us 50% off a build your own pizza, so we got a build your own LG pizza for 6 dollars! It was awesome!!!

Thursday was my last day of the work week, When i came home i decided to clean the kitchen, i did the dishes and then swept and mopped the floor, when Eric got off work, we went to the library, smiths, and walmart, We decided to use a gift card and get a pizza stone from bed bath and beyond (so i could make sugar cookies) and we went to cold stone with a gift card as well. It was just a nice day together.

Friday was my day off and i woke up at about 8 and made sugar cookies and started laundry. After my cookies were done my fun day with Marie started, I went to class with her just to keep her company, after that we went to costco and picked up pictures :D i was so happy with how they turned out! they were BEAUTIFUL! Its nice to have our wedding pictures up in the house now! Grace made us a SUPER yummy dinner and we played games until Eric and I were too tired and wanted to go home :D

Saturday was an interesting day, We slept in until about 10 (Eric was a little later) after hanging out for a little bit i decided i couldn't just sit around, we went to Barns & Noble and got me a coloring book :) its Tangled! And then after that we spent the rest of the night at home (well we did go to walmart to pick up more thank you cards) I started spring cleaning in the apartment, I even had Eric hang up pictures :) I am not done yet but i am starting to feel better about where things are at :D i am excited for where things are at! i love my life right now!

Today we went to church, it was such a wonderful meeting! I am finally starting to feel comfortable with speaking/participating! We are headed to Chris and Marie's later today so Marie and I can color! and we are going to get the rest of our thank you cards finished so i can start getting them out this week :D

What can I say...Life is AMAZING

So much has happened since I last blogged but I have been so busy lately! (which is why so much has happened!) haha! so.... where to start?

Eric brought spring into the apartment friday when he brought me home tulips! he was suppose to bring them home Thursday! It was great! they are beautiful! they only problem is...our little bundle of joy (Cami our kitty) likes to eat the leaves. But we are finding she likes to do this to almost all plants! Yet....she left my roses alone. I just don't understand her.

Well Eric and I have started to exercise! It started with running down to 7-11 (which was then not worth it after what we bought....lol!) I've decided if we are really going to start exercising then we should probably be eating better too. So i got new shoes! we are now going to go running in Murray park! I was worried at first because with my hypoglycemia I can't run as fast or for as long (we are hoping to work on building up that strength so we can) Eric was the best! He took it slow, let me set the pace, and when i got dizzy he was so great at helping me walk and making sure i didn't pass out! I married an amazing man!

Another exciting factor in our life is Cami. She has brought so much fun into our apartment! So....I had gone to Pet Smart with Marie to look at Gecko's (her's had recently passed away and we didn't know if we would get another one or not) While there the Human Society of Utah was there with cats and dogs. Cami stood out to me because the paper said we was a Russian Blue and that is what Eric wanted! I called him and sent him a picture. but i knew it wasn't going to happen! Eric went and saw her then met Marie and I for lunch, Marie and I left to go pick up her son, while making cake pop's later that night, Eric calls me to tell me the kitty is at home! the Human Society had originally names her Smurfette! we changed it to Cami! I am hoping she will help me out when it comes to the move!

 Cake pops are amazing! thats all i have to say! I love them!!! Marie and i bought a kit from Target. when we were done with them they looked like baby chicks! and they tasted even better! Marie and i have had so much fun lately! she went shoe shopping with me, as well as making dinner together, playing games, and just talking! I have officially reached best friend status with her :D haha! Its been great to have a couple friend we can go out and do things with, whether it is as a couple or if it is girls night/ guy night!

Work is going well for Eric and I, I had lost my badge for a couple of days, when i found it i just shook my head. I remember putting it there but could i remember when i was freaking out that i lost it....NO! Eric is enjoying work, he has had to take time off lately for his teeth, He had a filling, then a root canal! he has to go back to his dentist this week for the permanent cap, and then to the specialist to just check up on this teeth. I am going to be going to the Ortho and Dentist soon, When i got my wisdom teeth out, i couldn't wear my retainer and my teeth moved. I have a 5 year warranty on my teeth so i want to get them checked out and fixed before we leave. After they are fixed i am going to make sure that i get a permanent retainer on the top!  I love my dentist so i want to make sure to go back to him before we make our move! 



Eric and i took a date night, we went bowling, I learned Eric is really good at bowling while i.... Well you can see it on the score sheets....I am not so good. But if you are looking for a great place to go bowling, boonwood bowling does 3 games for 7 dollars! per person! it was great! we also went to virgs for dinner, i had a good taco salad Eric had an enchilada.




So i have to give a shout out really quick, Dan and Shelley Wallace are amazing!! I am so grateful for them! I can't wait until we see them again! I was struggling this week, when Dan (without knowing) made my day! he was so great! I really appreciate all there love, and friendship! 

Yesterday we had such a great day, We went on our Run in Murray park, and then we went to Jamba juice! I LOVE that place!!! i know it can be slow but it was so good and worth it! We got ready for the day and drove down to American Fork where we met the Peterson/Coffey :) clan for lunch at Chilli's (it was for valentines day from Mom and Dad Peterson) :) It was so wonderful! we had such a great time as a family! It had been so long since we had seen each other, it was nice to just spend time together without any worries! After we finished dinner we went and walked around walmart while waiting for Marie to finish with dinner, Then we went and kept her company (Chris had Drill this weekend) We had such a great time!
